cream cheese pancakes

Cream Cheese Pancakes

2 oz cream cheese
2 eggs
1 packet stevia sweetener (or diet sweetener of your choice)
1/2 teaspoon cinnamon (optional)

Put all ingredients in a blender and blend until smooth.
Let rest for 2 minutes so the bubbles can settle.
Pour 1/4 of the batter into a hot pan greased with butter or pam spray.
Cook for 2 minutes until golden.
Flip
Cook 1 minute on the other side.
Repeat with the rest of the batter.

Serve with sugar free syrup (or any syrup of your choice) and fresh berries.

These won't have the traditional doughy stack of pancakes.


Eggs with Avocado and Tomato

Another recipe to keep in mind although it's hard to call it a recipe when there isn't any cooking (except for the eggs).

Directions

  1. Cook egg any way desired.
  2. Slice tomato and avocado.
  3. Layer tomato, avocado, and eggs.  Sprinkle with paprika if desired.

Maple Butter Drops

You'll be seeing a lot of recipes being added.  Most of them will be for my low carb diet but that doesn't mean that they won't be good or that others can't enjoy them.  Here is one.

Maple Butter Drops
 The person who submitted the recipe said she got around 50 drops.  She made them small and for carb count it would be approximately 1/4 or 1/3 point.


1 stick of butter softened
2 TBSP hwc (heavy whipping cream)
1/4 cup sugar free maple syrup
1 TBSP sweetener (optional)

*Use a hand mixer or stand mixer.

Mix together the butter and hwc. Mix in the syrup. Taste, add sweetener if you want. Either pipe or spoon onto a cookie sheet covered with parchment and freeze. Store in the freezer.

Bacon Nachos

There isn't much to write on this one.

Alice's Spring Chicken





ALICE SPRINGS CHICKEN
4 boneless chicken breasts
8 pieces bacon, coarsely chopped
8 ounces fresh mushrooms, sliced
1 tablespoon butter
1 clove garlic, minced
4 ounces cheddar cheese, shredded
Season the chicken with the seasonings of your choice (I use Spicy Seasoning Salt); grill until just done. Keep the chicken warm. Meanwhile, fry the bacon in a skillet until crisp; drain on paper towels. In the same skillet, sauté the mushrooms and garlic in butter, seasoning with salt to taste. Cook until the juices have evaporated. Place the chicken on a foil-lined baking sheet. Top each piece of chicken with 1/4 of the mushrooms and bacon, then with the shredded cheese. Broil until cheese is melted and bubbly.
Makes 4 servings
I think this could be frozen
Per Serving: 356 Calories; 20g Fat; 40g Protein; 3g Carbohydrate; 1g Dietary Fiber; 2g Net Carbs

On the road again......

That is the road to getting healthier.  I'm going to follow Atkins Lo-Carb way for a bit.  WAY back in time, I was on it and lost 100 pounds.  My metabolism was much better back then so it will be harder but that's ok.  I've put it off enough.  Soooo what do you eat on Atkins?  First of all remember that it is low-carb and NOT no-carb.  For the first two weeks you try to keep your carbs to around 20 net carbs per day.  Most of the should come from foundation vegetables (vegetables that are not starchy but lower in carbs).  I find it easier, and this may be doing it an injustice, to think of it as no starches, caffeine, and sugars.  Like I said it is an injustice in one aspect because you can have a couple of cups of coffee or whatever.  I'm have my soda or coffee on the weekends or work gatherings.  We are cooking out at noon today so I might have a can of diet pepsi.  Not sure yet.  I have picked up on drinking water and now am now averaging around 80 oz a day.  This week I have lost 5.6 pounds.

Now...for some pictures of what I have been eating.

This was done on Saturday for lunch.  A cup of Romaine lettuce on the bottom and on the top ground chicken, onions, red and green peppers.  The seasoning is Waldon Farms Asian dressing which has zero calories/zero carbs.


 This is my favorite breakfast.  I call it breakfast scramble.  Ground pork, onions, green and red peppers, two fried eggs, a pinch of shredded cheese and topped with two tablespoons of salsa.  Sometimes I add mushrooms to it also.


 This is cooked chicken topped with Sargento ultra thin sliced cheese, put in microwave to melt and topped with some salsa.


The standard.  Nothing exciting but nourishing and filling and on the food plan.  Chicken salad (just mayo and some spices) over a bed of Romaine lettuce and some green olives on top.



Overall not bad and I'm pleased with the results.
